Dhokar Dalna - Bengali Traditional Food(ধোকার ডালনা)
Dhoka'r Dalna - one of the most popular Bengali recipes, a pure vegeterian dish, and proof that you don't always need onion/garlic to make a tasty Indian dish" Yellow split peas / Chana dal cake in a delicious curry. The type of 'Dhoka' that you'll want more.
Ingredients
Yellow Split Chickpeas (Cholar dal) - 100g
Asafoetida(Hing) - 1pinch
Roasted peanut - 10 pc
Ajwain - 1 pinch
Chopped Tomato 1
Green Chili 2
Ginger - 20g
Refined oil - 40-50ml
Red Chili Powder 3g
Kashmiri Red Chili Powder 5g
Turmeric Powder 3g
Cumin Powder 5g
Coriander Powder 5g
Garam Masala 1 pinch
Salt to taste
Sugar 1 pinch
Whole spices(Garam masala)
Cloves 4pc
Cinamon 1 small
Cardamom 4pc
Bay leaf 2pc
Black cumin 1 pinch
Cashew nut - 4pc
Process
Step 1: Sock the Yellow Split Chickpeas (Cholar dal) for 3-4hr
Step 2: Add Socked Yellow Split Chickpeas (Cholar dal) with green chili, ginger(10g), 2 tablespoons water, and grind them to a fine paste.
Step 3: Heat a pan, add 2 tablespoons of refined oil let the heat fist, add 1 pinch asafoetida to the hot oil, and add that dal mixture in it, roughly chopped roasted peanuts with 1 pinch of salt, sugar, Kashmiri red chili powder, turmeric powder, ajwain and mix them well until it turned into a tight dow.
Step 4: Take a flat plate and grease it with oil and spread that tight mixture, let it cool at room temperature and cut it into pieces(Square or Barfi).
Step 5: Take a pan and add refined oil, let it get hot, and partially take 10g of all-purpose flour, add it to 25-30ml of water, a pinch of salt mix them well, and make a runny slurry. Now deep that cake pieces of Dhoka and fry them both sides for 90sec on a high flame and keep it aside.
Step 6: In the same pan add some more oil and bay leaf, black cumin, cloves, cardamom, cinnamon, asafoetida then add finely chopped tomato, ginger paste, green chili paste, red chili powder, kashmiri red chili powder cumin powder, coriander powder, salt, sugar, and mix them well and add cashew nut paste and fry them until it releases oil and add water about 200g and mix it well and boil it to 10min.
Step 7: Add fried dhoka cakes to the gravy and boil it for 5 min(do not put the lid on) then add garam masala and ghee and turn off the gas and keep the lid on for the next 5 min.
